This cake is quick and easy to prepare. And bakes in about 45mins. it has that rich caramel flavor and moistness from the golden syrup but still is still light and easy to eat. Serve it with hot custard to transform it into the ultimate comfort dessert.

Ingredients

100g Butter

200g Golden Syrup

75g Light brown sugar

1 egg
-
150ml milk
-
200g Self raising flour

1 tsp vanilla
Directions
Preheat oven to 350f (160c) & line a 1lb loaf tin with parchment paper.
Melt the butter, sugar and golden syrup in a pan while stirring to combine. Take it off the heat once the butter has melted and allow it to cool down.
Beat the milk and egg together in a small bowl
Sift the flour into a big bowl, add the milk and egg mixture, stir it in a bit, then add the syrup butter mixture (make sure this has cooled off, if it’s too hot it may curdle/ cook the egg.
Mix it together just enough so that there are no lumps. And then pour the mixture into your prepared loaf tin.
Bake it for 40-50 minutes - until a skewer comes out clean. Mine was perfect at 45mins (my oven runs a little hotter than standard)
Let it cool in the tin for 10 mins before turning it out onto a cooling rack. Enjoy it with a nice cuppa tea. Or serve it after dinner with custard or ice-cream for a rich decadent pudding that tastes just like home.
