These quick, easy fruit griddle scones, are not as rich as their full dairy counterparts (in a good way). If you want to add the dairy back in just sub the soy milk and vegan butter for real milk and butter in the same quantity’s as written in the recipe.
Ingredients

120g plain flour

1 tsp baking powder

45g dairy free butter

120g raisins

1 egg

90ml soy milk (or other milk of choice)
Directions
Can a medium mixing bowl combine, the flour, salt, nutmeg and baking powder. Next stir in the raisins.
Beat together the egg and the milk. Make a well in the center of the flour and pour in the liquid.
Using a wooden spoon mix the egg mixture into the flour, stirring from the center of the bowl, drawing the flour in from the sides to form a smooth, thick batter.
Heat large nonstick skillet, add a little bit of cooking oil or nondairy butter. Drop tablespoon sized spoons of batter into the pan evenly spaced. Cook on medium heat for a few mins and then flip each scone over. they should be browned on both sides and dry in the middle.
Serve warm with your favorite fruit jam.
